Clementine has had her nose stuck in If You Give a Cat a Cupcake lately, and has decided she likes the idea of eating cupcakes for dinner! Mind you, the child has only ever had one “real” cupcake throughout the course of her very short lifetime (on her first birthday) and it was grain free with no sugar added. This is why I felt like I had some room for creative liberty when she asked for cake as an entree; I knew she was looking for an experience as opposed to a sweet treat. So, I came up with a hearty cupcake and sprinkles combo that I could serve her for dinner with a clear conscience.
These “cupcakes” are delicious, clean, and as easy as pie (actually easier).
We enjoyed eating these alongside organic sweet potatoes & salad. The meal was a perfect blend of sweet & savory, filled with protein, vitamins, & health! ENJOY!!
